Spinach “muffins”

Ingredients (makes 10-12):

Eggs, 6 (whole or part whole/egg whites)

Milk or unsweetened plant milk, 1/2 cup

Frozen spinach, thawed 900g (equiv. 2kgs fresh)

Feta cheese, crumbled, optional (full or low fat) 1/2 cup

Garlic, chopped, 1 clove

Onion, chopped, 1

Olive oil, 1 tbsp

Sea salt, 1/2 tsp

Cracked black pepper, 1/2 tsp

Nutmeg, a dash (according to taste)

Method:

Preheat the oven at 180 degrees C

Sauté garlic and onion in olive oil and set aside; in large bowl, mix the eggs with milk and seasoning. Press the water out of the completely thawed spinach. Add garlic/onion, spinach and cheese if using to the egg mixture and stir well. Spoon mixture into muffin tin to around 3/4 full. Bake for 30min. Can be stored in the refrigerator for up to 1 week
